Tips For Making Potato Wedges Recipe
Choosing Potatoes: I would heavily suggest you choose waxy potatoes or pink potatoes, as they contain ow moisture and sugar levels and along with that it has high starch content which helps to make them better for bake and fry.
Flour: flour plays an important role in making these Spicy Potato Wedges as this helps to bind the spices well with the potato and decrease the chances of burn. but make sure to use a small proportion. and you can also use half cornflour and half all purpose-flour for Potato Bites.
Parboiling Potatoes: this step is essential for the Fried Potato Wedges. when we bake Potato wedges they baked properly, but while frying them they may become uncooked from the inside so parboiling helps to cook and fry them completely.

Ingredients For This Recipe
- 2 large potatoes
- 2 tablespoons of garlic powder or you can make garlic paste
- ¼ teaspoon of crushed black pepper
- ½ teaspoon of oregano
- ½ teaspoon of dried basil
- 1.5 teaspoon of mixed herbs
- 2 tablespoons of olive oil (For baking)
- 1 tablespoon of rice flour/cornflour/all-purpose-flour
- salt as required
- oil for deep frying
Recipe Of Potato Wedges Step By Step
Preparation
- Take potatoes, wash them well in running water. peel them and cut them the half. then cut them again into 3-4 pieces. from each potato, you will get 6 to 8 wedges depends upon the size.
- Add potatoes to a big bowl and then add water in a full bowl. let soak them for at least 30 minutes.
- In between for the next step take a small mixing bowl, add garlic powder, crushed black pepper, oregano, dried basil, mixed herbs, red chili powder, and flour.mix well and keep it aside.
Method Of Making Deep-Fried Potato Wedges
- For the deep-frying method, you have to parboil the wedges that mean you have to boil potatoes till they half cooked. boil it for 4 to 5 minutes.
- After that drain the water immediately, and place it a room temperature.
- When potatoes cool down completely then add the prepared seasoning mixture and coat it well with the potatoes. sprinkle a little bit of water onto that so the dried mixture sticks well with potatoes.
- Now take a Kadai, add oil into that for deep frying. heat it well and when the oil turns medium-hot that time drops seasoned potatoes one by one into the oil.
- Fry them till they turn to light golden color and look crispy from the outside. take out them to a kitchen towel.
- Serve this Crispy Deep-Fried Potato Wedges with any of your favorite dip or sauce. sprinkle some salt and herbs if needed.
Method Of Making Baked Potato Wedges
- For the Baked method, preheat your oven for 15 minutes to 220 C (400 F).
- Drain the water of soaked potatoes, (remember in the baking process you don’t have to boil potatoes) wipe potatoes well with the help of a kitchen towel and let them dry for some time.
- Add potatoes, prepared seasoning, and 2 tablespoons of olive oil in a bowl. then mix them well and coat the seasoning nicely with potatoes. don’t add water in this process as we used oil so it helps to combine the seasoning.
- Now place the potatoes on the baking tray one by one and bake them for 20-25 minutes or until they turn crisp or till the potatoes are golden.
- Serve these Potato Wedges In Oven with a nice dip.
